Fried herring with egg sauce is a quick, easy, and delicious meal! Ingredients: -1/2 cup flour -1/4 teaspoon baking powder -1/4 teaspoon paprika -1 teaspoon salt -1 egg, beaten -1 cup milk -4 tablespoons butter or margarine -2 tablespoons finely chopped onion -1 pound fresh herring fillets, skin removed -Egg Sauce (recipe follows) Instructions: 1. Combine flour, baking powder, paprika and salt in a shallow dish. In another shallow dish, beat together egg and milk. Dip herring in the egg mixture and then coat with the flour mixture. Melt butter in a large skillet over medium heat. Add onion and herring. Cook for 3 to 4 minutes per side or until golden brown. Serve with Egg Sauce. Egg Sauce: 1. Heat 2 tablespoons of butter or margarine in a small saucepan over medium heat. Add 2 tablespoons of finely chopped onion and cook for 3 to 4 minutes or until softened.
